Here is an interesting alternative way of cooking ravioli that makes a very interesting snack or even starter for a New Year party.
Toasted Ravioli: An American recipe for a light starter or party snack of cooked raviolis that are coated in breadcrumbs, deep fried and served with a dip that are sure to be a talking point at a New Year party.
Ingredients:
24 turkey, squash and cranberry ravioli (or use beef ravioli, cheese ravioli or any other filled ravioli)
2 eggs, lightly beaten
90g seasoned breadcrumbs (preferably Italian breadcrumbs)
freshly-grated Parmesan cheese, for dusting
vegetable oil, for deep frying tomato sauce or marinara sauce or sauce aurore to serve as a dip
Method:
Prepare the ravioli according to the turkey, squash and cranberry ravioli then cook in boiling, lightly salted water for about 4 minutes, or until tender and they float to the top of the pan.
Drain with a slotted spoon and set aside to cool.
In the meantime, heat oil in a deep fryer (or to a depth of 5cm in a wok or large pan) to 180°C.
Once the raviolis are cool, dip in the beaten eggs then dip in the breadcrumbs to coat. Drip in the hot oil (do not over-crowd) and cook in batches for about 5 minutes, or until golden brown.
Remove with a slotted spoon and drain on kitchen paper.
Whilst still hot sprinkle with the grated Parmesan cheese.
Heat your choice of sauce in your microwave and serve hot to accompany the toasted ravioli.
