Thee Sone Thanut (Vegetable Pickle) a Classic Myanmar recipe for a quick pickle of mixed vegetables in a spiced oil and vinegar base that's typically served as an accompaniment.
Wash the vegetables, then cut into 4cm pieces. Set aside to drain and dry on a wire rack for 3 hours. After this time, turn the vegetables into a large bowl.
Heat the oil in a wok, then add the garlic, vinegar, oil, sugar, salt, curry powder and chilli powder. Cook, stirring frequently, for 5 minutes, then take off the heat.
Pour the mixture over the vegetables and toss to coat. Cover and set aside for 2 hours.
After this time, turn the pickle into a serving dish, then transfer to the refrigerator to chill.
This pickle will store for up to 5 days if kept chilled.
