This is an Asian fusion recipe, adding Chinese bamboo shoots and European apples to a Thai-style curry. This is also a quick, simple and delicious curry to prepare.

Ingredients:

350g beef steak, sliced into thin strips
2 Bramley apples of 4 tart green apples, peeled, cored and cut into large pieces
4 onions, peeled and cut into large chunks
2 tbsp Thai red curry paste
1 tbsp fish sauce
400ml coconut milk
3 tbsp soy sauce
1 tbsp brown sugar
100g red bell pepper strips
100g bamboo shoots (drained if from a tin)
100g mushrooms, sliced
1 hot chilli pepper, chopped
Oil for frying
10 fresh coriander leaves, to garnish

Method:

Combine the apples and onions in a small pot. Pour over 60ml (1/4 cup) water, bring to a boil then reduce the heat to low. Cover and cook until the water has evaporated and the apples and onions are soft.

Stir in the Thai red curry paste, fish sauce, soy sauce, sugar and coconut then process with a hand blender until smooth and creamy.

Take a larger pan and place over medium heat. Add a little oil and when hot use for fry the beef, bell pepper and mushrooms for about 5 minutes. At this point, add the sauce from the other pan along with the bamboo shoots. Cook over low heat for 3-4 minutes until the sauce comes to a boil.

Heat for a couple more minutes to ensure the flavours have had a chance to meld and everything is piping hot.

Turn into a serving bowl, garnish with the coriander leaves and serve with rice.
