Method:

Add the galangal, lemongrass and chopped chillies to a bowl and add enough boiling water to just cover. Allow to sit for fifteen minutes then mash them together.

Place the coconut milk and stock in a large saucepan, add the kaffir lime leaves and the mashed spices and simmer for 30 minutes. At the end of this time stir-in the chicken, lime juice, fish sauce and all the peppercorns. Return to a simmer and cook for a further five minutes. Pour into a bow, garnish with sprigs of mint and serve.
