Thai Green Curried Cod

Ingredients:

450g skinned cod fillets, cut into 2.5cm cubes
110g freshly-podded broad (fava) beans par cooked (or use fine beans instead)
2tbsp olive oil
8 spring onions, sliced
3 tbsp green curry paste
400ml coconut milk
110g peas
1 tsp light muscovado sugar
2 tbsp fish sauce
juice of 1 lime
2 tbsp rough-chopped coriander leaves
2 tbsp roughly-shredded Thai basil

Method:

Simmer the beans in salted water for 10 mins

Heat the oil in a saucepan and add half the spring onions, sauté for 30s and add stir in the curry paste. Fry for 1 minute, stirring continually before adding the coconut milk and bringing to the boil.

Add the cod and beans and simmer for 3 mins. Season with the sugar, lime juice and fish sauce. Simmer for 1 minute more and add to a serving dish. Sprinkle with the herbs and reserved onion. Serve with Thai fragrant rice.
