This is a classic Chinese starter of hard-boiled eggs finished by soaking in black tea until marbled.
Ingredients:
6 eggs
600ml (2 1/2 cups) water (about)
2 tsp black tea leaves
Method:
Fill a saucepan with water to a sufficient depth to cover the eggs. Bring to a boil then gently lower the eggs into the saucepan and cook for 10 minutes.
After this time, remove the eggs from the pan with a slotted spoon then lightly crack the shells all over with the back of a spoon.
Bring the water back to a boil, add the lea leaves, reduce to a simmer and cook for 5 minutes. Take the pan off the heat, return the eggs to the pan and set aside to stand until the tea has cooled completely.
These eggs can be served either shelled or unshelled (this is more typical) for breakfast, as a starter or as part of a main Chinese meal.
