Peas and Rice

Peas and Rice is a traditional Turks and Caicos Islander recipe for a classic one-pot dish of onions, bacon, chickpeas or pigeon peas, rice and hot dogs with bell peppers and hot chillies. This is the Turks and Caicos version of the dish that's prepared throughout the Caribbean and is more typically known as rice and beans (or rice and peas). The recipe given is the one-pot meal containing mini hot dogs. But you can omit these and serve as an accompaniment.

Ingredients:

2 tbsp olive oil
2 onions, chopped
300g bacon, diced
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 scotch bonnet chilli, minced
1/2 a chorizo sausage, chopped
2 tbsp tomato purée
400g tin chickpeas or pigeon peas
400g long-grain rice, washed and drained
1l water
pack of mini hot dogs (optional)
salt, freshly-ground black pepper, sprinkle of hot chilli powder, dried oregano crumbled

Method:

Place a large pan over medium heat. Once hot add the olive oil and use to fry the onion and bacon for about 5 minutes, stirring, until the onion is translucent and the bacon has begun to render its fat.

Add the bell peppers and chilli and fry for about 3 minutes more, or until softened. Now add in the chorizo.

At this point add in the hot dog sausages and stir well to combine.

Next to go in are the mini hot dog sausages. Give it all a good stir.

Add in the rice along with your choice of chickpeas or pigeon peas then pour over the water. Stir well to combine, bring to a boil then reduce to a simmer.

Stir in the tomato purée then season to taste with salt, black pepper, oregano and a generous sprinkle of hot chilli powder.

Cover and cook gently for about 15 minutes, or until the rice is tender and the flavours have had a chance to melt. At the end of this cooking time stir everything well then take the pan off the heat, cover and allow to steam for 10 minutes.

Fluff up the mixture and serve.
