Fried Conch Fritters

Conch (pronounced konk) is a common shellfish in the Turks and Caicos but it is not available elsewhere I would suggest clams and/or prawns (shrimp) as substitute)

Ingredients:

1l of oil for frying
90g plain (all purposes) flour
1 egg
125ml of milk
Salt and freshly-ground black pepper, to taste
1/4 tsp hot chilli powder (or to taste) I would use ground scotch bonnet
225g of conch meat, chopped
1/2 onion, chopped
1/2 green bell pepper, chopped
2 celery sticks, chopped
2 garlic cloves of garlic

Method:

Heat oil in a wok, large pot or deep fryer to 180℃.

Sift the flour into a bowl, mix in salt, black pepper and chilli powder. Form a well in the centre, add the egg and milk and stir to combine.

Add the conch meat, onion, green bell pepper, celery, and garlic and mix thoroughly together.

Take rounded tbsp of the resultant batter and add to the heated oil. Fry the fritters until golden brown all over, turning with a spider or slotted spoon to ensure even cooking.

Remove from the oil with a spider, drain on paper towels and serve with hot sauce.
