This is a classic way of coating and flavouring fish for frying. In the Turks and Caicos islands, the fish typically used are red snapper, grouper or mahi mahi.
Method:
Coat the fish fillets evenly with the butter. Then coat in the blackening spices, making sure you have a thick, even, coating.
Place a large frying pan over medium-high heat. Once hot, add the olive oil. Now layer in the snapper fillets.
Cook the fish for 4-5 minutes on each side, or until the fish is blackened and cooked through.
Remove the fish from the pan and serve immediately.
