In essence, this is a Medieval-style cheese cake (or baked cake of cheese and eggs) that has survived to modern times.
Ingredients:
For the dough:
1 egg
100g of sugar
200g flour
1 sachet of baking powder
100g butter
For the Filling:
1 kg of cottage cheese (40% fat)
200g caster sugar
1 sachet of vanilla sugar
1 sachet of whipped pudding
5 eggs
Method:
Mix together an egg, sugar, flou and baking powder in a bowl. Add the butter, dice and rub in with your fingertips. Crack in the egg then bring everything together as a dough. Knead for a few minutes, then form into a ball, cover with clingfilm (plastic wrap) and chill in the refrigerator for 60 minutes.
Combine the powdered sugar and vanilla sugar in a bowl. Add the egg yolk and beat to combine then add in the cottage cheese (fromage blanc) and the whipped pudding sachet.
Beat to combine then set aside.
Add the egg whites to a clean and dry bowl then beat until the egg whites stand in stiff peaks. Gently fold this into the cheese mixture, folding with a spatula.
Butter and flour a flan tin. Spread the dough into the base and up the sides with your fingers. Once the tin is covered pour in the cheese mixture.
Transfe to an oven pre-heated to 180°C (Gas Mark 5-6) and bake for about 60 minutes, until the pastry is nicely coloured and the top of the filling is golden.
When cooked transfer to a wire rack and allow to cook in the tin before slicing into wedges and serving.
