Tapenade Monegasque (Monaco-style Tapenade) a Classic Monegasque recipe for a spreadable paste made from a blend of anchovies, olives and capers in a mustard, garlic olive oil and lemon juice base that's typically served with toast.

Ingredients:

1/2 tin anchovies in olive oil
225g pitted black olives
1 tbsp capers
3 tbsp olive oil
1 tsp lemon juice
1/2 tsp Dijon mustard
1 garlic clove, crushed
1/2 tsp bayleaves, finely chopped

Method:

Combine all the ingredients in a food processor and pulse until you have a paste (do not make this too smooth).

Serve spread on small triangles of crisp toast.
