This is a classic recipe of a whole head of cauliflower slathered in tandoori paste and baked in the oven.

Ingredients:

1 batch Homemade tandoori paste
1 medium head of cauliflower
Mint chutney, to serve
Chopped mint leaves, to garnish

Method:

Prepare homemade tandoori paste according to the recipe instructions. Trim off the green cauliflower leaves (reserve for another dish). Trim the base of the cauliflower stalk so that it can sit flat on the tray. Cut a cross into the base of the cauliflower (this helps the stem cook evenly. Coat the cauliflower evenly with the tandoori paste.

Sit the cauliflower on a baking tray lined with baking parchment, transfer to an oven pre-heated to 220C (200 Fan) and roast for about one hour or until tender. To prevent burning drizzle a little oil on the cauliflower every 15 minutes during cooking. If your cauliflower is a little larger then it may take longer to cook.

Once done, transfer the cooked cauliflower to a serving dish. Top with chopped mint leaves. Serve accompanied with mint chutney.
