This is an authentic recipe for a traditional tandoori paste. It comes out a little more yellow than most people might think. This is because it does not contain Tandoori colouring as I’m trying to eliminate artificial colours. You are welcome to add a pinch of Tandoori colouring if you like, but it does nothing for the taste.
Ingredients:
1 tsp ground turmeric
1 ½ tsp ground coriander
1 tsp
garam masala
½ tsp ground fennel seeds
½ - 1 tsp Kashmiri chilli powder
½ tsp ground black pepper
3-4 tsp paprika
1 tsp garlic paste
1 tsp ginger paste
2-3 tbsp yoghurt
Juice of one medium-sized lemon
1 tsp dried fenugreek leaves (kasuri methi)
2 tbsp oil
Salt to taste
Method:
Mix all the ingredients together in a deep bowl. Add more water, as needed, to form a smooth paste.
That’s it, all you need now is to slather the tandoori recipe on your chicken, fish, whole cauliflower, broccoli etc before pan-frying, barbecuing or baking in an oven.
