Tajin is a chilli-lime seasoning that is the essential flavouring for Mexican street food, particularly roasted sweetcorn.

Ingredients:

250ml (1 cup) Dried chillies: guajillo, ancho, and chipotle
Finely-grated zest of 1 Lime
2 tsp Coarse Sea Salt

Method:

I like my food spicy, so I didn’t bother removing the seeds from the chillies (however if you would like your blend milder, please do remove the seeds).

With a sharp knife, slice open your chillies and remove the stems. I use about 250ml (1 cup) of dried whole chillies for this recipe, which will yield about a 120ml (1/2 cup) ground spice blend.

Coarsely chop the chilli pieces, to help fit them in a spice or coffee grinder. Sit the chillies in the base. Add the lime zest, followed by the salt.

Once all the ingredients are in the spice grinder, pulse the mixture until it's finely blended.

Transfer to a clean and dry screw-top jar and store for later.
