Tagalia is a traditional South Sudanese recipe for a classic stew of minced meat and onion thickened with dried okra powder that's served topped with crisp-fried onions. The full recipe is presented here and I hope you enjoy this classic South Sudanese version of: Tagalia.
Add the oil to a pan or wok and use to fry the onions until crispy. Remove with a slotted spoon, drain on kitchen paper, then blend with a little water. Meanwhile, fry the meat in the oil remaining in the pan. When the meat has browned add 500ml water, bring to a boil, reduce to a simmer and cook for 30 minutes.
Add the tomato paste and cook for a further 5 minutes. Crush the garlic with the black pepper in a pestle and mortar and add to the pan along with the onions.
Finally add the okra powder, stir to combine and cook for 2 minutes. Serve over aseeda or with rice.
