Tabasco Steaks with Watercress Butter: Classic Fusion recipe for a dish of steaks rubbed with Tabasco sauce that are barbecued to cook and served with watercress butter.

Ingredients:

1 bunch of watercress
85g unsalted butter, softened
4 sirloin steaks (about 225g each)
4 tsp Tabasco sauce
salt and freshly-ground black pepper, to taste

Method:

Using a sharp knife, finely chop 4 tbsp of the watercress (reserve a few watercress leaves for garnish). Place the butter in a small bowl, then beat in the chopped watercress with a fork until evenly incorporated. Cover with clingfilm (plastic wrap) and chill in the refrigerator until needed.

Sprinkle each steak with 1 tsp Tabasco sauce, rubbing it well into the meat. Season to taste with salt and black pepper.

Place the steaks on your barbecue over hot coals and cook for about 2 1/2 minutes per side for rare or 4 minutes per side for medium and 6 minutes per side for well done.

Transfer the meat to warmed serving plates, garnished with the reserved watercress leaves then top with the watercress butter and serve immediately.
