This is a classic Chinese soup of pumpkin in a chicken stock base with pickled recipes from the Szechuan province.

Ingredients:

1l chicken stock
450g pumpkin, peeled, de-seeded and cut into small cubes
1 tbsp preserved vegetables, chopped
1 tsp ground white pepper
115g leafy greens (eg pak choi, Chinese leaf, Chinese cabbage etc), shredded
salt, to taste

Method:

Pour the chicken stock into a large pan and bring to a boil. Add the pumpkin, reduce to a simmer and cook for about 5 minutes or until tender.

Now stir in the preserved vegetables and black pepper. Cook for a couple of minutes to heat through then add the shredded greens. Adjust the salt to taste, cook for 1 minute more then ladle into warmed soup bowls and serve.
