This is a modern African fusion recipe for a stew of sweet potatoes and parsnips in a spiced tomato base that is based (loosely) on a classic sweet potato stew from Togo.

Ingredients:

2 sweet potatoes, peeled and cubed
2 parsnips, peeled and cubed
1 tbsp oil
2 large onions, sliced
1 tbsp cumin seeds
1 tbsp ground coriander seeds
1 tbsp ginger paste (or finely-grated ginger)
3 garlic cloves, crushed
1 tsp chilli paste
400g tin of chopped tomatoes
2 tsp fresh parsley, roughly chopped

Method:

Bring a pan of lightly-salted water to a boil. Add the sweet potatoes and parsnips and parboil for 5 minutes then drain in a colander and set aside.

Heat the oil in the base of a large flame-proof casserole. Add the onions and spices and stir-fry for 3 minutes. Add the ginger, garlic and chilli paste and stir to combine.

Add the parboiled vegetables and the chopped tomatoes (along with their juice). Cover and simmer for 20 minutes, or until the ingredients are tender.

Garnish with the chopped parsley and serve hot, accompanied by plain boiled rice or couscous.
