When fried, dandelion flowers are truly delicious and have a delicate honeyed flavour. For best results you should pick the flowers when fully open on a bright, sunny, morning. This means they retain the maximal amount of pollen and nectar. Also pick only the flower heads and minimize the amount of attached stalk.
Ingredients:
30 to 40 fully-open
dandelion flower heads
1 large egg
250ml milk
150g plain flour
pinch of salt
1 tbsp runny honey or maple syrup (optional)
50g butter, for frying
Method:
Clean the dandelion flowers (do not wash, as this will remove the flavour). Whisk the egg lightly in a bowl then beat in the milk, salt and flour to form a batter. If you want this slightly sweet then add honey or maple syrup.
Heat half the butter in a large frying pan or skillet over medium heat and when foaming take the first of your dandelion flowers and, holding it by the green stem end dip the petals into the batter and twirl the flower until it is completely and evenly covered.
Drop the flower into the pan, flower side down then continue dipping the flowers and adding to the pan until about half are done. Check the first ones every now an then until they are cooked golden brown on the base. At this point flip the flowers over and brown then on the other side. When cooked a golden brown on both sides remove from the pan, drain on kitchen paper to remove any excess oil then transfer to a plate and keep warm as you fry the remaining flowers.
When done, drizzle with a little honey and serve. These make and excellent snack or dessert and go well with a glass of chilled white wine.
