Swedish Chicken Salad

Ingredients:

1.6kg roasted chicken
180g long-grain rice
1 green eating apple, halved, cored and thinly sliced
1 red eating apple, halved, cored and thinly sliced
2 bananas, peeled and sliced thickly
lemon juice
115ml double cream
210ml mayonnaise
1 tsp curry powder
salt and freshly-ground black pepper, to taste
watercress, to garnish

Method:

Roast the chicken then set aside to cool. In the meantime bring a pan of lightly-salted water to a boil, add the rice and cook for about 12 minutes, or until the rice is tender. Drain and set aside to cool.

Once the chicken is cold carve into slices then cut these slices into strips. Sprinkle the apple and banana slices with lemon juice to prevent discolouration and set aside. Now whip the cream to the same consistency as the mayonnaise then fold into the mayonnaise to combine. Add the curry powder and stir to mix. Fold in the chicken strips along with the fruit then add more lemon juice to taste and adjust the seasonings.

Pile the mixture on a bed of rice, garnish with the watercress and serve.
