Svitanak (Belorusian Chicken Kotlety) is a traditional Belorusian recipe for a classic dish of chicken breast fillet stuffed with a mix of cheese, garlic and mayonnaise which is breaded before being baked in the oven. Ingredients:

350g chicken breast fillet
80g hard cheese, grated
2 tbsp mayonnaise
4 garlic cloves
1 egg
80g dried breadcrumbs
4 tbsp butter
salt
oil for frying

Method:

Combine the cheese, garlic and mayonnaise in a bowl. Divide the chicken fillet into one large and one small piece and salt them liberally. Spread the filling mixture over the large piece then place the small fillet piece in the centre and fold the edges of the larger piece over in half-moons.

Dip in the beaten egg to cover then coat with the breadcrumbs to coat evenly. Heat oil in a pan and use to cook the meat until lightly browned. Transfer to a roasting pan, place in an oven pre-heated to 180°C and roast for 30 minutes, or until completely cooked through. Serve hot.
