Strawberry Palmiers

Ingredients:

240g puff pastry (fresh or frozen and thawed)
sugar, to dredge
150ml double cream
4 tbsp single cream
1 tbsp orange liqueur (eg Cointreau)
2 tsp icing sugar
340g fresh strawberries

Method:

Roll the pastry on a lightly-floured work surface to a rectangle about 30 x 25cm in size. Dredge with caster sugar then fold the long sides to meet in the centre and dredge again. Now fold in half lengthways and press lightly along its entire length with a rolling pin (do not press down too hard).

Cut into 12 equal slices and arrange these well apart on a baking tray, cut side down, then open the tip of each. Bake in an oven pre-heated to 210°C for about 8 minutes, or until the sugar is a light caramel colour. Turn each one over and bake for a further 4 minutes then transfer to a wire rack and set aside to cool.

Once the pastries are cold whip the single and double creams together until light and fluffy. Add the liqueur and icing sugar before folding to combine. Use this mixture to sandwich the palmiers together in pairs. Halve the strawberries and tuck into each of the palmiers. Serve immediately.
