Strawberry Buttercream Icing: An American recipe for a creamed butter and sugar icing (frosting) that's flavoured with home-made strawberry syrup.

Ingredients:

200g unsalted butter, softened
400g icing sugar, sifted
4 tbsp strawberry syrup
1 tbsp vanilla extract
2 tbsp single cream or whole milk
pinch of salt

Method:

Cream together the butter and 50g of the icing sugar until smooth. Continue working in the icing sugar 50g at a time, except that each time you have added 100g sugar to the butter work in 1 tbsp of the strawberry syrup.

Once all the sugar has been incorporated add the vanilla extract and beat very fast (or on high if using an electric whisk) then work in the cream a tablespoon at a time until the buttercream is soft enough to pipe, but still holds it shape.

Add a pinch of salt and use immediately to decorate your cakes.
