Strawberry Syrup: An American recipe for a method of making home-made strawberry syrup from a sieved blend of sugar, water and fresh strawberries.

Ingredients:

250g fresh strawberries, sliced
100g granulated sugar
120ml water

Method:

Combine the strawberries, sugar and water in a medium pan over medium-low heat.

Bring the mixture to a boil, reduce to a simmer and cook, uncovered, for 10 minutes.

After this time, take off the heat and pour into a blender. Process on high speed for about 10 seconds or until smooth.

Turn into a bowl, cover with clingfilm (plastic wrap) and refrigerate over night until well chilled.

Use to add an intense strawberry flavour to icings (frostings), cakes and cocktails.
