Stir-fried Squid with Herbs and Sea Aster is a modern Fusion recipe for classic dish of sliced squid rings stir-fried with vegetables and sea aster leaves in a garlic, mustard seed and ginger sauce. Ingredients:
450g squid, cleaned and sliced into rings
1 tbsp olive oil
1 tsp sesame oil
1 tbsp mustard seeds
4 spring onions, sliced
1 tsp garlic, chopped
1 tsp fresh ginger, grated
1/2 red bell pepper, finely sliced
8 mange tout, trimmed and halved lengthways
115g leaves, washed and drained
2 tbsp flat-leaf parsley, finely shredded
1 tsp fresh basil, finely shredded
2 tsp lemon juice
Method:
Heat the olive oil in a wok and when hot add the mustard seeds. As soon as they begin to 'pop' add the squid, garlic and ginger.
Stir-fry the mixture briskly for 2 minutes then ad the bell pepper and spring onions. Cook this mixture for 1 minute more then add the mange tout (snowpeas) and sea aster leaves. Drizzle over the sesame oil and cook the mixture for 1 minute more.
Drizzle over the lemon juice then reduce the heat and stir-in the parsley and basil. Turn into a warmed dish and serve immediately.
