Steamed Sole with Black Bean Sauce a Classic Chinese recipe for a dish of whole sole steamed in a parcel with soy sauce, rice wine, oil and spices.
Ingredients:
1 whole sole, gutted and washed
2 tsp fermented black beans, rinsed and chopped
2 tsp garlic, finely chopped
1 tsp fresh ginger, finely shredded
1 tbsp spring onions, shredded
1 tbsp light soy sauce
1 tsp Shaoxing rice wine (or dry sherry)
1 tsp groundnut oil
dash of sesame oil
1/2 tsp brown sugar (or palm sugar)
pinch of ground white pepper
Method:
Take a doubled sheet of kitchen foil and shape into a bowl that's large enough to hold the fish. Sit the fish inside.
Mix all the remaining ingredients together and pour over the fish. Sit in a steamer basket over a pan or wok of boiling water and steam for about 12 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve immediately.
