Ingredients:
2 onions, sliced
2 tomatoes, peeled and chopped
4 scotch bonnet chillies, pounded to a paste
900g spinach, washed, trimmed and chopped
4 tbsp peanut butter
salt and black pepper to taste
oil for frying
Method:
Fry the onions in a large pot until soft. Add tomatoes and chillies to the pot and fry for a minute or so, then add the spinach. Cook, covered, on medium heat for 5 minutes, stirring often to prevent sticking. Thin the peanut butter with 100ml of hot water to form a smooth paste and add to the stew.
Season with salt and pepper and cook for a further 8 minutes (continue stirring). Serve immediately.
