Ingredients:

160g plain flour
40g brown sugar
10g caster sugar
1/4 tsp ground cinnamon
generous grating of fresh nutmeg
120g butter

Method:

Stir together the flour, sugars and spices in a bowl then add the butter and either rub in with your fingers or cut in with a knife until the mixture resembles fine breadcrumbs. Shape the dough into a ball then turn onto a floured surface and knead until smooth.

Roll the dough into a circle about 20cm in diameter. Carefully trim and shape the edges then transfer to a greased baking tray and slice into 16 wedges. Prick the surface with the tines of a fork (to produce he classic pattern and to prevent the shortbread from curling whilst cooking) then transfer to an oven pre-heated to 170°C (325°F/Gas Mark 3) and bake for about 20 minutes, or until the centre has set and the edges are just beginning to brown.

Whilst still warm separate the wedges then allow to cool on the baking tray for 10 minutes before transferring to a wire rack to cool completely.
