Spice Cake

Ingredients:

90g butter or margarine
3 tbsp golden syrup or honey
1 egg
180g self-raising four
pinch of salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp ground ginger
1 tbsp lemon juice
1 tbsp water
360g sultanas
freshly-grated zest of 1 lemon

For the Topping:
2 tbsp flour
2 tbsp brown sugar
1/4 tsp freshly-grated nutmeg
1/4 tsp ground ginger
30g butter
30g shelled walnuts

Method:

Cream together the butter and syrup or honey then beat in the egg until thoroughly combined. Continue beating until light and fluffy. Now sift the flour, salt and spices into a separate bowl. Combine the lemon juice and water in a cup. Add the flour mix the the egg mix alternately with the lemon juice and water, beating well after each addition. Mix thoroughly then add the sultanas and lemon zest. Turn into a greased and floured, or a greased and lined cake tin then level the top and set aside as you prepare the topping.

Combine the four, sugar and spices. Add the butter then either rub or cut into the flour mix with a fork. When the mixture is crumbly scatter over the top of the cake. Roughly chop the walnuts then scatter these over the cake as well. Transfer the cake to an oven pre-heated to 180°C and bake for about 70 minutes, or until the top is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 10 minutes then set aside on a wire rack to cool completely. Either serve warm as a sweet or cold as a cake to accompany coffee.
