Spelt, Fig and Pomegranate Salad: A British recipe for a vegetarian salad of spelt with figs, herbs, red onion and pomegranate seeds that can be served as a starter or accompaniment. This also works well as a Christmas salad.

Ingredients:

150g spelt
1 1/2 tbsp extra-virgin olive oil
2 tsp white balsamic vinegar
1/4 small red onion, sliced wafer thin
2 tbsp flat-leaf parsley, coarsely chopped
1 tbsp mint, chopped
8 fresh, ripe, figs, tips removed and quartered lengthways
seeds from 1/2 pomegranate

Method:

Wash the spelt, place in a saucepan and cover with plenty of cold water. Bring to a boil, reduce to a simmer and cook for about 30 minutes, or until the grains are tender.

Drain as soon as the grains are cooked and immediately toss with the olive oil and vinegar before seasoning to taste.

Stir in the onion and herbs, then turn into a serving bowl. Season the cut sides of the figs with salt and black pepper, then gently toss with the spelt mixture.

Scatter over the pomegranate seeds and serve immediately.

If desired, you can garnish with a few shavings of Parmesan or Pecorino cheese.
