Souvlaki

Souvlaki is a traditional Greek recipe for a classic dish of cubed lamb marinated in thyme, garlic, lemon zest, red wine and olive oil that are threaded onto skewers before being barbecued or grilled and served sprinkled with chilli flakes. Souvlaki is a classic Greek dish of lamb kebabs dressed in garlic, thyme, lemon zest, red wine and olive oil.

Ingredients:

1.5kg leg of lamb, trimmed of fat and sinew, boned and cubed
1 1/2 tsp dried thyme
6 garlic cloves, crushed
juice of 3 lemons
finely-grated zest of 3 lemons
150ml olive oil
150ml red wine
1/2 tsp dried red chilli flakes

Method:

Combine the thyme, garlic, lemon zest 100ml olive oil and red wine in a glass or ceramic bowl. Add the lamb and toss to combine then cover and set aside to marinate for at least 3 hours (or marinate over night in the refrigerator).

After this time drain the lamb then combine the marinade with the remaining olive oil and lemon juice. Now thread the lamb pieces onto skewers that have been soaked in water for at least 45 minutes.

Brush the lamb with the marinade then place on a barbecue or under a grill. Cook for about 8 minutes per side, or until the lamb is cooled through. Sprinkle with chilli flakes and serve with a Greek salad.
