South African Prego Steak

Prego sauce is based on a Portuguese original and the combination of beef steak in Prego sauce has become a South African pub favourite.

Ingredients:

Juice of 1 lemon
125ml red wine
1 bayleaf
2 garlic cloves, crushed
1 red chilli, chopped (choose a chilli of your desired heat level)
pinch of salt
2 ripe medium-sized tomatoes, chopped
oil, for frying
4 steaks (minute steaks for the quick version, rump steaks for the gourmet version).

Method:

Begin with the marinade. Combine the lemon juice, red wine, bayleaf, garlic, chilli and salt in a bowl. Allow to cool then pour into a plastic bag. Add your steaks then set aside in the refrigerator for at least 1 hour to marinate (4–6 hours is best).

When the meat is marinated, remove from the marinade. Pour the marinade into a saucepan and bring to a boil. Add the tomato pieces and cook for about 10 minutes or until thick (adjust the sweetness, to taste).

When the sauce is thick take off the heat. Heat a little oil in a frying pan. If using minute steaks cook for 1 minute from each side. If using rump steaks cook for 2 minutes on the first side and up to 4 minutes on the second side (depending on how you want them done).

To serve, sit the meat in your chosen bread (I like ciabatta bread for this but Portuguese rolls are traditional and baguettes also work) and top with the thickened sauce.
Serve immediately.
