Soupe d'avocat Abidjanaise (Avocado Soup in the Manner of Abidjan)
Soupe d'avocat Abidjanaise (Avocado Soup in the Manner of Abidjan) is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic dip of pureed avocados and chicken stock flavoured with lime juice, yoghurt and Tabasco sauce. Ingredients:
2 ripe avocados, peeled and chopped
900ml chicken stock or vegetable stock
2 tbsp lime juice
1 tbsp plain yoghurt
a few generous dashes of Tabasco sauce or African hot pepper sauce
salt and black pepper, to taste
Method:
Place the avocado flesh and the stock in a blender and process until smooth then add the lime juice, yoghurt and Tabasco sauce. Process then season with salt and black pepper. Refrigerate for at least an hour to ensure the soup is properly chilled.
Ladle into soup bowls and garnish with a very thin slice of lime and a few dashes of Tabasco sauce.
