Sofrito Cubano (Cuban Sofrito)

Sofrito Cubano (Cuban Sofrito) is a traditional Cuban recipe for a classic version of the base Spanish tomato sauce made from a blend of tomatoes, chilli, onion, garlic, olive oil and paprika that is also flavoured with Cuban oregano and which can be served on its own, but is more typically used as the base for other recipes. This is a classic Cuban version of sofrito, the ubiquitous Spanish tomato-based sauce that is used as a base sauce for a number of dishes. In contrast with the Spanish version (see the recipe for sofrito, this version is more highly spiced and herbed.

Ingredients:

900g tinned, crushed, tomatoes
2 green chillies (Scotch bonnet are typical, but you can use milder) chopped into 5mm pieces
1 yellow onion, peeled and finely chopped
1 garlic clove, finely chopped
extra-virgin olive oil (Spanish, of course)
1 tsp sweet paprika
2 tbsp Cuban oregano, finely chopped
salt and freshly-ground black pepper, to taste

Method:

Heat a large heavy-based frying pan over medium heat. When hot pour in just enough olive oil to cover the base of the pan.

Add the onions and fry until translucent (about 5 minutes) then add the green chilli pieces and cook gently, stirring frequently, for another 5 minutes. Now add the minced garlic and fry for 1 minute before adding the the tomatoes (with juice) and the Cuban oregano and paprika. Stir to combine then season to taste.

Bring to a simmer and cook for between 12 and 15 minutes, or until the sauce has thickened.
