Here is a classic modern Irish recipe for a classic pizza made with a base of that Irish staple, the soda bread.
Ingredients:
For the Base:
250g plain flour
1/2 tsp (rounded) bicarbonate of soda
1/2 tsp salt
285ml buttermilk
For the Topping:
2 tsp olive oil
1 small onion, peeled and diced
1 garlic clove, crushed
200g tinned chopped tomatoes
generous pinch of sugar
75g cheese (eg Cheddar), grated
2 Kabanos sausages, (about 75g in total), sliced
75g closed cap mushrooms, wiped clean and sliced
8 basil leaves, finely shredded, to garnish
salt and freshly-ground black pepper, to taste
Method:
Begin by preparing the tomato paste. Add the oil to a small frying pan. When hot add the onion and garlic and cook over low heat for 5 minutes, or until softened.
Add the tomatoes and season well with salt and black pepper. Cook for between 8 and 10 minutes, or until thickened to a paste.
For the base, sift together the flour, bicarbonate of soda and salt into a large bowl. Pour about 250ml of the buttermilk into this and mix with a fork to form a soft but not sticky dough (add more flour or buttermilk, as needed).
Turn the dough onto a lightly-floured work surface. Knead briefly and divide into four pieces. Form each piece into a ball and place on a greased baking tray. Flatten with your knuckles to stretch the dough into rounds about 15cm in diameter.
Spread the tomato paste over each dough round, covering the pizza almost to the edge. Scatter over half the cheese then add the sausage slices, the mushrooms, bail and finish with the remaining cheese.
Transfer to an oven pre-heated to 230°C (Gas Mark 8) and bake for about 20 minutes. Serve sliced into wedges and accompanied by a crisp salad.
