Socca

Socca is a classic Monegasque crêpe or pancake made with chickpea flour that is sold hot in the markets of Monaco. Traditionally it's cooked over a wood fire in a copper pot.
The ingredients below are sufficient for 2 socca of 50cm diameter each that will serve between 4 and 6 people.
Ingredients:
500ml water
250g chickpea flour
2 tbsp olive oil
1 tsp salt
Method:
In a bowl, beat together the water and chickpea flour until smooth. Add the olive oil and salt and whisk until the batter is smooth and free of lumps.
Pre-heat your socca pan (or a large frying pan). If using a socca pan ladle in half the batter. If using a frying pan ladle in 1/4 of the batter. Spread the batter evenly over the pan and cook over high heat until bubbles form on the surface and the surface is golden brown and the base just slightly burned.
Serve immediately, cut into 5cm squares and seasoned with freshly-ground black pepper.
