This is a traditional Monegasque street food (also popular in Nice where it's known as La Socca). Typically this is a street food eaten with a glass of chilled, crisp, white wine.

Ingredients:

300g chickpea flour
3 tbsp olive oil
300ml water
1/2 tsp salt
salt and freshly-ground black pepper, to taste

Method:

Combine the chickpea flour and salt in a bowl and mix thoroughly. Now add the olive oil and water and whisk to a smooth batter.

Place a frying pan (about 30cm) over medium-high heat and wait until the surface of the pan is hot enough so that a drop of water splashed into the pan dances. Brush the surface of the pan generously with oil then add about 300ml of the batter. Sprinkle the top with salt and black pepper and cook until the bottom of the pancake is lightly browned and the top feels dry to the touch (usually about 4 minutes).

Cut the pancake in to serving pieces then slide off the frying pan with a spatula and mound into a plate. Repeat the cooking process with the remaining batter. Eat hot with chilled white wine.
