Smoked Salmon with Pea Pancakes: A British recipe for a starter of pea puree and egg pancakes topped with salmon that makes a different kind of starter for Valentine's day or Shrove Tuesday.

Ingredients:

200g fresh or frozen peas (defrost if frozen)
1 egg
2 tbsp plain flour, sifted
olive oil, for greasing
200g smoked salmon slices
200ml crème fraîche
salt and freshly-ground black pepper, to taste
lemon wedges, to garnish

Method:

Bring a pan of water just to the boil. Add the peas and blanch for 90 seconds. Drain and refresh under plenty of cold, running, water.

Add half the peas to a blender, crack in the eggs and pulse to combine then process until smooth.

Stir in 1 tbsp cold water then transfer into a mixing bowl before folding in the flour. Season with salt and black pepper then stir in the remaining peas.

Lightly grease a large non-stick frying pan with oil. When hot add four ladlefuls of the batter, forming four circles. Cook for about 3 to 4 minutes on each side, until just browned. Remove with a spatula and set aside to keep warm as you repeat the cooking process with the remaining batter (you should get 8 pancakes).

Transfer the pancakes to a serving plate and top each one with slices of smoked salmon and a dollop of crème fraîche. Serve accompanied by the lemon wedges.
