Smoked Fish Light Soup

Ingredients:

250g onions, thinly sliced
60ml vegetable oil
450g tomatoes, cut into 3cm pieces
4 tbsp tomato paste
1/2 tsp chilli flakes
1l water
900g smoked fish, de-boned and skinned

Method:

In a large saucepan fry the onions in the vegetable oil until just softened then add the tomatoes along with the tomato paste, chilli flakes and water. Allow to simmer for 15 minutes then add the smoked fish and simmer for a further 10 minutes.

Adjust the seasoning and serve with fufu.
