Kwarezimal (Almond Cakes)

Kwarezimal (Almond Cakes) is a traditional Maltese recipe for a classic baked dough of almonds, flour, sugar and citrus zest that are baked, brushed with honey and decorated with a blanched almond. Kwarezimal are typically described as 'bicotti' i.e. dried Italian-style biscuits and are traditionally served during lent.

Ingredients:

200g blanched almonds
200g plain flour, sifted
250g caster (or golden caster) sugar
1 tsp ground cinnamon
orange flower water
freshly-grated zest of 1 lemon
freshly-grated zest of 1 orange
freshly-grated zest of 1 tangerine
honey, to brush
whole, blanched, almonds to decorate

Method:

Lightly-toast the blanched almonds then grind coarsely in a coffee grinder. Mix in a bowl with the flour, sugar, cinnamon, citrus zests and a little orange flower water.

Add just enough water to bring the mixture together as a stiff dough. Turn out onto a lightly-floured work surface and knead until smooth. Take pieces of the dough and shape these into ovals about 18cm long, 5cm wide and 2mm thick.

Transfer these ovals onto a greased and floured baking tray then place in an oven pre-heated to 190°C and bake for about 20 minutes, or until golden. Whilst the almond cakes are still hot brush with honey then press in the whole almonds.
