Despite the French name, this is actually local Antillean spiny lobster rather than true lobsters or langoustines. Caribbean spiny lobsters Panulirus argus get their name from forward-pointing spines that cover their bodies to help protect them from predators. This dish is a speciality of the island of Saint Martin and neighbouring Saint Barthélemy though variants can be found in much of the French Antilles.
The Caribbean spiny lobster found in the waters around Sint Maarten is a true delicacy. Sint Maarten’s Lobster is often grilled to perfection, infused with flavours of garlic, lemon, and butter, and served with a side of local vegetables. Each bite is a succulent nod to the island’s fresh seafood offerings.
Method:
2 spiny lobsters (about 350g) split in half lengthways
10 tbsp of olive oil
juice of 4 limes (or 2 lemons)
1 tbsp chives, finely chopped
2 shallots, finely chopped
2 garlic cloves, minced
2 tbsp flat-leaf Parsley, very finely chopped
fine sea salt and ground cayenne pepper, to taste
Paprika, for dusting Herbes De Provence, for dusting

Begin with the marinade. In a bowl, mix together the olive oil, lime juice, chives, shallots, garlic and parsley. Season to taste with salt and cayenne pepper.
Mix well to combine, then drizzle this marinade over the cut side of the lobsters.
Finish with a dusting of paprika and herbes de Provence.
Place the prepared lobsters under a hot grill, first cooking them cut side uppermost for 10 minutes. At this point turn them over and cook the shell side for about 10 minutes, until nicely coloured.
Arrange the grilled lobsters on a serving platter. Baste the meat with any remaining marinade just before serving.
