Gâteau des patates douces (Sweet-potato Cake) is a traditional Saint-Martin Creole recipe for a classic dessert cake of sweet potatoes and pumpkin in an egg, milk and flour batter with spices leavened with beaten egg whites. Ingredients:

1.4kg sweet potatoes, peeled and coarsely grated (white typically)
180g sugar
60g pumpkin, peeled, se-seeded and coarsely grated
8 1/2 tbsp butter, melted
1 tsp ground cinnamon
4 eggs, separated
500ml milk
120g flour
2 tbsp vanilla extract
1 tsp ground nutmeg
1/4 tsp ground allspice
1/8 tsp freshly-ground black pepper
200g raisins
2 tbsp rum or brandy

Method:

Pre-heat your oven to 180°C.

Beat the egg yolks until pale and creamy then combine in a mixing bowl with all the other ingredients except the egg whites. Mix thoroughly to combine.

Whisk the egg whites in a clean and dry bowl until they form stiff peaks, then gently fold into the other ingredients

Turn into a greased baking dish or lined springform cake tin. Transfer to the centre of your pre-heated oven and bake for about 60 minutes, until the surface of the cake is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.

The cake can be served hot or cold, topped with whipped cream or ice cream.
