Slappap is the generic South African name for a soft maize meal porridge. Typically this is served as a breakfast, snack or light lunch dish.
Ingredients
1l water
1 tsp salt
150g mealie meal (white maize meal)
1 tbsp butter
Method:
Bring the water to a boil, then add the salt and, whist whisking constantly, pour in the maize meal in a steady stream. Reduce to a simmer and continue cooking, stirring constantly, for about 15 minutes.
Add the butter and stir to blend into the slappap. Serve immediately.
If serving for breakfast you can serve with honey or sugar as a sweetener, milk for cooling and sliced bananas or other fruit as an addition.
