Curried goat is one of the most popular dishes in St. Lucia and embodies the rich culinary tradition of the Caribbean. This dish combines tender goat meat with a variety of spices that add a special flavour to every bite. The use of coconut milk also provides a creamy texture and makes the dish extremely aromatic. As with most St Lucia recipes calling for curry powder I would suggest an aromatic
Madras curry powder as it's a common commercial curry powder on the island.
Method:
500g cubed goat meat
2 tbsp curry powder
400ml tin of coconut milk
2 onions, diced
3 garlic cloves, minced
1 piece of freshly grated ginger
1-2 Scotch bonnet chilies (or to taste)
Salt and freshly-ground black pepper, to taste
2 tbsp vegetable oil
Fresh coriander leaves, to garnish
