Curried goat is one of the most popular dishes in St. Lucia and embodies the rich culinary tradition of the Caribbean. This dish combines tender goat meat with a variety of spices that add a special flavour to every bite. The use of coconut milk also provides a creamy texture and makes the dish extremely aromatic. As with most St Lucia recipes calling for curry powder I would suggest an aromatic Madras curry powder as it's a common commercial curry powder on the island.

Method:

500g cubed goat meat
2 tbsp curry powder
400ml tin of coconut milk
2 onions, diced
3 garlic cloves, minced
1 piece of freshly grated ginger
1-2 Scotch bonnet chilies (or to taste)
Salt and freshly-ground black pepper, to taste
2 tbsp vegetable oil
Fresh coriander leaves, to garnish

Method:

Start by placing the goat meat in a bowl and marinating thoroughly with curry powder, salt, and pepper. This should be done for at least an hour to allow the spices to fully infuse. Meanwhile, chop the onions, garlic, and ginger to prepare the dish.

Place a large pan over medium heat. Once hot add the vegetable oil. Add the diced onions and fry until softened (about 4 minutes) then add the garlic, ginger, and chilies and fry for another 2 minutes.

Add the marinated goat meat and fry until lightly browned all over. Pour in the coconut milk and bring the mixture to a boil. Reduce the heat to a simmer, cover and cook gently for about 80 minutes, until the meat is tender.

Garnish with fresh coriander leaves before serving.
