Saint Lucia Chicken Curry

As with most St Lucia recipes calling for curry powder I would suggest an aromatic Madras curry powder as it's a common commercial curry powder on the island.

Method:

500 g chicken breasts
2 cloves of garlic
2 onions
1 bunch parsley, chopped
1 stalk celery, sliced
4 sprigs of thyme
4 potatoes, peeled and cut into chunks
2 tbsp curry powder
1 tbsp butter
2 tbsp ketchup
salt
pepper

Method:

Start by cutting the chicken into pieces and seasoning it with salt, garlic, thyme, some of the parsley, onions and ketchup. Sir to coat the chicken in this mixture, then set aside to marinate for 20 minutes.

Place a wok or large pan over medium heat. Add the butter and when foaming use to fry the chicken until golden brown all over. Add the curry powder and stir-fry for 1 minute. Now pour in enough boiling water to barely cover the ingredients.

Bring to a boil, reduce to a simmer and cook for 10 minutes. At this point add the potatoes and celery. Return to a simmer and cook for about 20 minutes until tender (add more water as needed).

Take off the heat and serve over a bed of rice.

To make a more substantial curry you can also add halved boiled eggs and green beans.
