Breadfruit Balls

Breadfruit is one of Saint Lucia's staple carbohydrate sources and this is one of the many ways in which it's prepared.

Ingredients:

1 medium-sized breadfruit
1 egg
150g finely-chopped onions
2 garlic cloves, finely chopped
2 celery sticks, finely chopped and
5 parsley sprigs, finely chopped
230g of grated cheese
120g of dried breadcrumbs
salt to taste

Method:

Cut the breadfruit in quarters and clean it by removing the skin and the centre stalk.

Boil the breadfruit in lightly-salted water for about 20 minutes, or until it's soft. Drain the breadfruit, transfer to a bowl and mash with a potato masher until smooth then set aside to cool.

Whilst the breadfruit is still warm, add in the remainder of the ingredients, mix it thoroughly. Set aside until completely cool.

Shape the mixture into balls of your desired size then roll in dried breadcrumbs so they are completely coated. To cook, they can be deep fried or baked.

If you are baking the dish, then place in oven for approximately 35 minutes at a temperature of 200°C.
