Saint Kitts Stewed Saltfish

Ingredients:

500g saltfish (sat cod)
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
500g tomatoes chopped
5 garlic cloves, chopped
4 tbsp vegetable oil
2 tbsp butter
6 spring onions, finely chopped
1 small onion
salt and freshly-ground black pepper

Method:

Soak the saltfish in a bowl of over-night, changing the water three times during this period.

The following day, drain the saltfish, place in a large ran and cover with plenty of water. Bring to a boil and cook until the fish is tender (about 20 minutes).

Drain it and allow to cool before removing bones and skin then flake the flesh.

Heat oil in a large pan over medium heat. Once hot, add the bell peppers, spring onions, onion and garlic. Cover and cook over low heat for 5 minutes, stirring occasionally.

Add the tomatoes and simmer over medium heat for 2 to 3 minutes.

Finally add in the saltfish and butter then season to taste with salt and freshly-ground pepper. Cover the stew and simmer over low heat for 5 minutes.
