Saltfish and Breadfruit Hash is a popular dish in Saint Kitts and Nevis as well as Antigua and Barbuda, featuring the local staples breadfruit and salted codfish. To prepare the salt cod, soak the saltfish in a bowl of over-night, changing the water three times during this period. The following day, drain the saltfish, place in a large ran and cover with plenty of water. Bring to a boil and cook until the fish is tender (about 20 minutes).
Ingredients:
600g salt cod, boiled and flaked (see the how to prepare saltfish/stockfish to make your own)
500g breadfruit, boiled and diced
1 onion, diced
2 tomatoes, diced
2 garlic cloves, minced
1 red bell pepper, diced
2 tbsp olive oil
Salt and freshly-ground back pepper to taste
Add the diced tomatoes and cook for another 2 minutes. Stir iun the flaked saltfish and diced breadfruit then stir gently to combine all the ingredients. Cook for 5-7 minutes, stirring occasionally, until all the hash ingredients are heated through.
Season to taste with salt and freshly-ground black pepper, to taste then serve.
