Ingredients:

120g red chilies
60g shallots (or 60g onions), peeled
60g garlic, peeled
60g fresh young ginger
12 tbsp lemon juice
2 tbsp rice vinegar
4 tbsp sugar
2 tbsp salt
250ml chicken stock, boiling

Method:

In a small food processor or mortar grind together the chillies, shallots, garlic and ginger until semi-fine.

Transfer the resultant paste into a bowl and add the boiling chicken stock.

Stir well before adding the lemon juice, vinegar, sugar and salt.

Set aside for at least 1 hour to pickle before serving.
