Take two oven-proof pie dishes and spread out the cloudberries in one and the caster sugar in another. Transfer to an oven pre-heated to 180°C and bake for 20 minutes.
After this time, carefully remove from the oven then turn the contents of both dishes into a bowl and stir to combine. Add the citric acid and continue stirring until the sugar dissolves into the cloudberries.
Carefully spoon or ladle into washed and sterilized jars that have been warmed in the oven. Secure lids on top and set aside to cool. Label and store in the refrigerator.
If you want to be able to store these, then once they have cooled process in a boiling water bath for five minutes before allowing to cool again and then store in a cool, dark, cupboard.
